Vietnamese cacao: from the farm to a bar of chocolate

Few people realise that a fragrant bar of chocolate begins with a colourful tropical fruit grown right here in Vietnam. Cacao is a long story from farm to table, and Vietnam is steadily earning a place on the world map of fine-flavour cacao.

1. Varieties & famous growing regions

Most Vietnamese cacao belongs to the hybrid Trinitario group, giving fruity notes and a balanced profile that chocolate makers favour. It is often intercropped beneath coconut palms or in fruit orchards, using the land well while providing shade.

  • Ben Tre — cacao intercropped with coconut, known for fruity-noted beans.
  • Dak Lak and the Central Highlands — red basalt soil giving steady yield and quality.
  • The Mekong Delta and southeast region also have many cacao growers.

2. Season

Cacao trees fruit scattered through much of the year, but there are usually two main harvest waves, peaking around the end and the middle of the year depending on region and weather. A ripe pod is known by its skin turning a distinctive yellow or orange-red.

3. Nutrition & benefits

The white pulp around the beans has a pleasantly tart-sweet taste, while pure cacao powder is rich in flavonoid antioxidants and minerals such as magnesium and iron.

  • The juicy cacao pulp can be eaten fresh or fermented into a refreshing drink.

The higher the cacao percentage, the more flavonoids a chocolate keeps — but the more bitter it is too. Choose 70% or above for less sugar and a deeper cacao flavour.

4. How to choose good pods

  • The pod skin should have turned an even yellow or orange-red, no longer green.
  • A faintly hollow sound when tapped means the beans and pulp have loosened inside.
  • The shell should be intact — no cracks, mould spots or soft patches.
  • A firm feel and a fresh stem indicate a recently harvested pod.

5. Storage

  • Keep whole pods in a cool, airy spot for a few days before splitting for the beans.
  • Fresh beans need to be fermented and then dried promptly to keep their aroma and avoid mould.
  • Cacao powder and dried beans keep best in airtight jars in a dry place, away from moisture and strong odours.

6. From pod to chocolate bar

What gives cacao its flavour lies in fermentation. After the pod is opened, the beans and their pulp are fermented for several days, then dried, roasted and finely ground. It is this careful fermentation that builds the signature layers of fruit, floral and chocolate notes.

  • The pulp can be pressed into a tart-sweet drink before the beans are fermented.
  • Pure cacao powder makes a rich, lightly sweetened hot or cold chocolate.

When making hot chocolate from pure cacao powder, a tiny pinch of salt makes the sweetness and the cacao aroma stand out far more.
