Rambutan: varieties, season and how to choose

Rambutan is a beloved tropical fruit of the southern Vietnamese summer, its soft crimson spines wrapped around sweet, translucent flesh. Knowing a few common varieties and a couple of simple tricks is all it takes to bring home clusters that are juicy, crisp and sweet.

1. Varieties and famous growing regions

Long Khanh in Dong Nai is a celebrated rambutan area, alongside Ben Tre, Vinh Long, Tien Giang and other orchards across the southern delta — all with soil and climate that suit the tree well.

Vietnam grows three especially popular kinds of rambutan, each with its own character:

  • Java rambutan (the everyday kind): soft spines, thick flesh and a gentle sweetness, though the flesh clings a little to the seed.
  • Longan rambutan: smaller fruit with shorter spines and crisp flesh, richly sweet and fragrant like dried longan — a favourite for many.
  • Thai rambutan (the clean-separating kind): thick flesh that peels cleanly from the seed, crisp and sweet with little cling.

2. When rambutan is in season

Rambutan peaks from around May to August, at its best in midsummer when the fruit is plentiful, sweet and most affordable. Thanks to off-season flowering techniques at some orchards you can still find it scattered through the year, but the main season remains the sweetest and best value.

3. Nutrition and benefits

Rambutan is rich in water and vitamin C, and also provides fibre and a few minerals — a cooling little burst of energy on a hot day:

  • High in vitamin C, which helps support the immune system.
  • Contains fibre that can help support digestion.
  • High water content helps with hydration and cooling on sultry days.

Rambutan is quite sweet and not low in calories, so if you are watching your sugar intake, enjoy it in moderation rather than a whole kilo at once.

4. How to choose good fruit

  • Pick fruit with bright red skin (or red-yellow depending on the variety) and soft spines still slightly green at the tips — a sign of a freshly picked bunch.
  • A gentle squeeze should feel firm and full, not mushy or weeping.
  • Favour whole clusters with green stems and leaves; they stay fresh longer than loose fruit.
  • Avoid fruit with dry, blackened spines, dark patches or that has dropped from the stem.

5. Storing

  • Keep it in a cool, airy spot and enjoy within a day or two, as rambutan loses its looks quickly.
  • For longer keeping, wrap it loosely in a paper or perforated bag and refrigerate, using it within four or five days.
  • Do not wash before storing; rinse only just before eating to keep the spines from going soggy and spoiling.

6. Ways to enjoy it

The best way is still to peel and eat it fresh, lightly chilled — crisp, cool and cleanly sweet. Rambutan also lends itself beautifully to summer desserts and cooling drinks.

  • Deseed it and toss with other fruit for a chè dessert or a fruit salad.
  • Chill it briefly with ice and mint leaves for a refreshing cooler.
  • Stuff the flesh with a small piece of pineapple for an unusual sweet-and-tangy appetiser.

To peel, score lightly around the skin with a knife and give it a gentle twist; the flesh comes away neatly without tearing.
