Pineapple: choosing sweet fruit and making drinks

This fruit goes by several names in Vietnam — thơm, dứa, khóm — but shares one charm: a bright sweet-tart taste and a fragrance that fills the whole kitchen. With a few small tricks you can pick a golden, juicy one and make the most of every part.

1. Varieties & famous growing regions

The two most common groups are the Queen pineapple — small, with deep eyes, deep-yellow flesh and an intense sweet aroma — and the Cayenne (Dong Giao) type, larger, smoother, very juicy, and often used for processing and canning. Khom is the familiar southern name for its especially sweet fruit.

  • Tan Phuoc (Tien Giang) — a major pineapple area of the Mekong Delta.
  • Dong Giao (Ninh Binh) — known for Cayenne pineapple used in processing.
  • Northern midland and mountain areas also grow fragrant, sweet Queen pineapple.

2. Season

Pineapple is available almost year-round, but it is sweetest and cheapest in the dry, sunny season, usually peaking from around March to June. Main-season fruit that has soaked up plenty of sun tends to be sweeter and more aromatic than off-season fruit.

3. Nutrition & benefits

Pineapple is rich in vitamin C, high in water and fibre, and contains its signature enzyme bromelain. It is a light, cooling fruit well suited to hot days.

  • Bromelain may help break down protein after a meaty meal.
  • High water content helps with natural hydration on hot days.

Bromelain can leave the tongue tingling for some people who eat a lot of raw pineapple. A little chilli salt, or a quick dip in lightly salted water, softens the effect.

4. How to choose a good one

  • Skin turning yellow from the base upward, with large, well-spaced eyes, signals a sweet, ripe fruit.
  • It should feel heavy for its size, firm to the touch, with no soft or weeping spots.
  • Smell the base for a gentle sweet fragrance; a sharp, fermented smell means it is overripe.
  • Fresh green crown leaves — a middle leaf that tugs out with slight ease suggests it is just right.

5. Storage

  • Keep a whole fruit in a cool, airy spot for a few days; refrigerate if it is ripening fast.
  • For longer keeping, peel into chunks and freeze — handy for smoothies and juices.
  • Cut pineapple should be sealed, refrigerated and used within a day or two.

6. Ways to enjoy & drinks

Pineapple is lovely eaten fresh, but it is also a star at the drinks bar. Juice it with a little ice and mint for a cooling glass; blend it with orange and carrot for a vibrant juice; or pair it with passion fruit and soda for a bright, refreshing lift.

  • Lightly grill a few slices to bring out a caramel sweetness, served with yoghurt.
  • It also shines in savoury dishes like sour soup, curry and sweet-and-sour stir-fries.

Save the core to blend into a smoothie — it is sweet and full of bromelain too; just blend it well until smooth.
