How to pick tree-ripened durian

A tree-ripened durian rewards you with golden, buttery flesh and an unmistakable fragrance. With a few simple checks, you can pick a great one without cutting it open.

1. Look at the spikes and shape

A mature durian has plump spikes with broad, firm bases. A well-rounded, balanced fruit usually holds more flesh than one that looks lopsided or sunken on one side.

Gently squeeze two neighbouring spikes together: if they flex and move closer, the fruit is usually ripe.

2. Trust your nose

Near the stem and the base, a ripe durian gives off a strong, sweet aroma. Almost no smell means it may be underripe; a harsh, sour smell suggests it is past its best.

3. Tap and shake gently

Tap the shell with the back of a knife or a knuckle. A low, slightly hollow “thud” means the flesh has loosened from the wall and turned soft. A faint movement inside when you shake it is another good sign.

4. Check the stem

A fresh stem that is still slightly moist and firm signals a recently harvested fruit. A shrivelled, blackened stem often means it has been stored a long time or picked early and force-ripened.

5. Store and enjoy

  • Keep a whole durian in a cool, shaded spot and enjoy within 2–3 days.
  • Separated flesh keeps best sealed and frozen; thaw naturally to preserve its creamy taste.
  • A little hot tea alongside balances the rich sweetness nicely.
