Fresh coconut: cool, sweet water all year round

Few drinks are as humble yet as refreshing as a coconut cut open on the spot. Vietnam grows several well-loved drinking-coconut varieties, each with its own character. Let us explore them so you can pick the sweetest one next time.

1. Coconut varieties and famous growing regions

Ben Tre is known as the land of coconuts, home to many of the country’s best drinking varieties. Each one differs a little in husk colour and in the taste of its water.

  • Green “xiem” coconut: small, green-husked, with clean sweet water — the most common and popular variety.
  • Fire “xiem” coconut: an orange-red husk, richly sweet water and usually petite fruit.
  • Pandan coconut: its water carries a faint pandan-leaf aroma and is much sought after.
  • Tra Vinh “sap” (macapuno) coconut: a specialty with thick, waxy flesh, prized for its meat rather than its water.

2. When they are in season

Coconut trees bear fruit all year, so fresh coconut is always within reach. Even so, during the hot months from around March to August the water tends to be sweeter, and demand for it as a cooling drink is at its highest.

3. Nutrition and benefits

Fresh coconut water is rich in natural electrolytes such as potassium, low in calories and fat-free, making it a pleasant way to rehydrate on a hot day or after exercise.

  • Pick a coconut at just the right stage — too young means watery water, too old means little water that has gone sour.
  • Give it a shake — a full sloshing sound inside means plenty of water.
  • Look for a fresh green husk with a firm stem, no cracks or mould.
  • A good drinking coconut is usually small, evenly round and lighter than the oil-producing kind.

5. Storing

  • Keep whole coconuts in a cool spot for a few days; refrigerating keeps the water sweet longer.
  • Once opened, drink it right away; any left over should be sealed, chilled and used the same day.
  • Coconut water can be frozen in an ice-cube tray to use in drinks later.

6. Ways to enjoy and mix

The best way is still to drink the chilled water straight, then scoop out the soft young flesh alongside. Coconut water is also a wonderful base for many refreshing drinks and familiar braised dishes.

  • Add a few kumquat slices or mint leaves to lift the flavour.
  • Use coconut water to cook sweet soups or to braise meat and fish for a gentle natural sweetness.

Chill the coconut for a few hours before drinking, or add ice as soon as it is opened — coconut water is always nicer cold than warm.
